The hold up will be because the inflatable dinghy just isn't made for speed, merely flotation.If the motor was on a small aluminum boat I would say 12-15 mph or even a little more. You'll not go very fast very long, maybe 4 mph, however going down will be surprisingly fast as this motor will very likely produce enough torque to rip the corners out of the inflatables transom. Id say around 5 will be your max. I have a 10 foot plastic boat and get around 5 mph with a 40 lb thrust Minn Kota with a full charge.
Sounds like a heavy motor for an 8 ft dinghy. As a trolling motor, it probably won't get you up over 5 knots.
